Coffee Dry Rub

  • 2 tablespoons kosher salt

  • ¼ cup ground Kavka coffee (roughly the texture of coarse sea salt)

  • 2 tablespoons smoked paprika

  • 2 tablespoons garlic powder

  • 1 tablespoon black pepper

  • 1 tablespoon onion powder

  • 1 tablespoon ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon cayenne

Blend together and keep in the pantry on hand.

To cook like the backstrap pictured below or a tenderloin :

Preheat the oven to 375 F.

Drizzle olive oil on the meat and cover with the dry rub.

Heat a pan with oil and sear for 1 minute on each side.

Place the pan in the oven for 15-20 minutes and cook until a thermometer inserted into the middle registers 130 F for medium rare.
