Buckwheat Walnut Jam Bars
Ingredients
For the dough :
1 cup butter (or a plant based alternative)
1 cup granulated sugar
1 teaspoon sea salt
1 egg yolk
1/2 cup buckwheat
1 cup millet flour
1 cup cassava flour
For Finishing :
8 tablespoons of jam (Strawberry Basil used here)
2 tablespoons chopped walnuts
Process
Preheat oven to 350 F.
Line a 9 x 9 baking pan with parchment paper and leave about 1 inch of overhang around all sides. Crease the parchment to fit into the corners of the pan.
Make the dough : In a mixer (or with a wooden spoon and some patience) beat the butter, sugar and salt until incorporated and smooth.
Add the egg yolk and mix until just combined.
Add the flours to the bowl and mix together until fully incorporated, it will be crumbly and hold together when you press it.
Remove 1 cup of the dough and keep it refrigerated.
In the bottom of the prepared pan, spread out the rest of the dough and press down to make an even layer.
Bake until the edges are golden brown, about 30 minutes.
Remove from the oven and cool in the pan for 15 minutes.
Spread the jam across the baked layer.
Sprinkle with walnuts.
Crumble the refrigerated 1 cup of dough over the top.
Bake for 35 minutes.
Let cool before cutting into squares. Enjoy!
